Mole made by Rosalba Ramos from over 30 ingredients, the known ones are chocolate from Chiapas, almonds, peanuts, bread, chiles, olive oil - only her family knows the full recipe. All ingredients soured through a dense network of friends and contacts, the tradition of mole making speculatively is at least as much about maintaining these relationships than the food itself. Sold from the front room of Rosabla's home in Oaxaca, she doesn't make a huge amount so you need to order a week or so in advance. Used as a base for savoury dishes or just eat it on bread.
